Botanical description

The tree

The tree is an evergreen perennial, and has the ability to withstand harsh environmental conditions such as drought, stony lands, shallow and fertile soils ^[32] . The root system is superficial and not deep, especially in irrigated agriculture, its depth is between 40-70 cm. The trunk of young trees is smooth and round, and with age it loses its roundness as some parts grow at the expense of others. It is thick and becomes thicker with increasing age of the tree, and is twisted and full of veins and twists. The height of the tree is usually between 3-6 m, although it may reach 10-12 m in some varieties , species and conditions.

The tree head consists of a strong network of branches and twigs , and the leaves are thick, leathery, 2-3 years old, usually falling in the spring . The flowers are borne in compound panicles that arise in the leaf axils of the branches that formed in the previous growing season.

Flowers and pollen

Flowers may be hermaphrodite (complete) or masculine (reduced ovary), and pollen grains are light and are transmitted by wind or insects such as honey bees . Pollination is self-pollinated, but it has been noted that most varieties have a degree of self-sterility, and hence the importance of cross-pollination appears , so more than one variety is planted in a single orchard.

Olives

It is a small, oval-shaped, very bitter seed, yellowish -green or purple in colour , with a single, very hard kernel. Its shapes and sizes vary according to its varieties. ^[33]

The tree prefers rocky slopes close to the coast and a Mediterranean climate, but it can be grown far from the coast and the tree can tolerate drought due to its deep root system in rainfed agriculture . But the more suitable the conditions are, the higher the quality of the olives.
